Recipe of the Week 6/14: Jicama and Strawberry Salad

Yields 6 Servings 

Ingredients 

  • 2 cups shredded lettuce
  • 8 oz jicama, peeled and diced
  • 3 green onions, sliced
  • 6 fresh strawberries, hulled and sliced
  • 2 tbs extra virgin olive oil
  • 2 tsp lemon juice
  • salt and black pepper 

Instructions 

  • Place the lettuce, jicama, green onions, and strawberries in a large serving dish. 
  • Whisk together the oil, lemon juice, salt and black pepper, then pour it over the salad. Toss to mix and store in the fridge until ready to serve.
