Recipe of the Week 2/10 - Cauliflower Mash

Yield 6 Servings 

Ingredients 1 large head cauliflower, chopped (about 6 cups) 1/2 cup chicken broth 2 garlic cloves, crushed 1 teaspoon whole peppercorns 1 bay leaf 1/2 teaspoon salt 

Instructions Place cauliflower in a large saucepan; add water to cover. Bring to a boil. Reduce heat. Simmer, covered, until tender, 10-12 minutes. Drain; return to pan. Meanwhile, combine remaining ingredients in a small saucepan. Bring to a boil. Immediately remove from heat and strain; discard garlic, peppercorns and bay leaf. Add broth to cauliflower. Mash to reach desired consistency.
